Apple Crumb Coffee Cake
1/2 cup milk
1/4 cup butter
1/4 cup warm water (105F to 115F)
3-3 1/2 cups of all purpose flour
1/4 cup sugar
1 tespoon salt
1 package active dry yeast
1 egg
Cinnamon Crumb Filling
2 apples, peeled, cored and thinly sliced
Scald milk, add butter and water. Cool to lukewarm. Place 2 cups flour,sugar,salt and yeast in bowl with dough hook mix turty seconds. Gradually add warm liquids to bowl, mixing two minutes.Add egg and mix 1 minute longer.Add remaining flour and mix until it clings to the hook. Knead for five minutes.
Place in a greased bowl,turning to grease top. Cover and let rise in a warm place until doubled in bulk, about 1 hour.
Punch dough down and divide in half. Roll each half to a nine inch circle. Place one circle in bottom of a greased springform pan. Sprinkle 1/4 or cinnamon Crumb Filling over dough.Arrange half the apples slices on filling, sprinkle 1/4 filling over apples. Place remaining dough circle in pan and repeat with remaining crumb mixture and apples. Cover and let rise in a warm place until doubled in bulk, about 1 hour.
Bake at 375 F for 45 to 50 minutes. Remove sides of springform pan immediately and cool on wire rack.
Cinnamon Crumb Filling
Mix all ingredients with a fork until crumbly
1 cup sugar
3/4 cup all purpose flour
2 1/2 teasoons cinnamon
6 tablesoons butter softened
